Maple Vanilla Nut Granola.

Ingredients:
  • 3 tablespoons coconut oil
  • 1/3 cup maple syrup
  • 1 tablespoon brown sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 3/4 cups of chopped pecans (or other nut)
  • 2 cups of old fashioned oats

  1. Preheat the oven to 350F.
  2. In a saucepan on low heat, melt together coconut oil, maple syrup, and brown sugar until warm. Turn off the heat.
  3. Stir in vanilla extract and cinnamon to the maple syrup mixture.
  4. Combine the chopped nuts and oats in the sauce pan as well.
  5. Pour the granola mixture onto a lined baking sheet. Bake for 10-12 minutes, stirring halfway through baking.
  6. Let the mixture cool and break into bite sized pieces. Enjoy!

Vincent and I both start our mornings off with a bowl of yogurt every day. We both love this granola as a topping for our yogurt. It's crunchy and sweetened with just maple syrup and a little brown sugar. I usually make a new batch of granola fresh each week, and this recipe is our favorite! We love the classic flavors of maple, pecans, and cinnamon.

Tips and Suggestions
  • Mixing all of the ingredients in the saucepan before mixing in the oats helps evenly distribute the flavors throughout the granola.
  • When the granola comes out of the oven, it will still be soft. The granola will become crunchy as it cools.
Notes:
  • Butter can also be used in this recipe, instead of coconut oil. It gives the granola a buttery flavor that reminds me of chocolate chip cookies!
  • The granola can be stored for up to a week in an airtight container.
