  • 1 curry roux package
  • 1 Onion
  • 3-4 Carrots
  • 4-5 Potatoes
  • 1 1/2 cups of water

Instructions:

  1. Cut carrots, potatoes, and onions into bite-sized pieces.
  2. Place the cut vegetables, 1 package of curry roux, and 1 1/2 cups of water into the Instant Pot.
  3. Close the Instant Pot lid and cook on the stew setting for 12 minutes.
  4. Carefully, release the pressure vent.
  5. Stir well to incorporate the curry roux.
  6. Serve with freshly steamed rice or with Udon noodles.

This recipe is perfect for a quick weeknight dinner, because it's delicious and really hands off! Everything can be made in the Instant Pot and be ready in 20 minutes!

I love this recipe for Japanese Curry because it's so simple and delicious. It's ready in 20 minutes, healthy, and versatile enough to be a vegetarian option for dinner! Vincent and I have been trying to participate in Meatless Mondays, or eat only vegetarian dishes for a day once a week. If you wanted some more protein, you could also add some chicken, beef, or tofu. We also like to cook this on Sunday and have it ready as a meal-prep dish for the week, since it reheats so well!

  • We're using carrots, potatoes, and onions, but you can use other veggies, such as green beans, asparagus, bell peppers, or corn. The possibilities are endless!
  • If you'd like more protein, you could add some chicken, beef, or tofu with the vegetables to cook in the Instant Pot. We also like to eat it with some Katsu or shrimp tempura on top of the curry.
Notes:
  • We are using a curry roux block from the grocery store. One box comes with 2 packages, but we'll just be using 1. They usually come in different spicy levels: mild, medium, hot.
