Oven Roasted Salsa.

Ingredients:
  • 1 pound ripe tomatoes, any variety (Early Girl tomatoes pictured)
  • 4 unpeeled garlic cloves
  • 1 large onion, cut into 1 inch pieces
  • 1 jalapeño pepper, seeded and cut in quarters
  • 1 cup cilantro leaves
  • 1 lime
  • 2 teaspoons salt

  • Cook time: 15 minutes
  • Makes: 4-6 servings

Instructions:

  1. Cut the tomatoes in half and place skin side up on a large baking sheet with the unpeeled garlic cloves, the onion pieces, and the jalapeño.
  2. Broil for 10 minutes until the tomatoes and jalapeños have blackened and blistered.
  3. Peel and discard the garlic skin. Let the vegetables cool slightly on the baking tray.
  4. Place the cooled baking sheet ingredients into a food processor with the cilantro leaves, the juice of 1 lime, and salt.
  5. Puree in the food processor until it is the desired consistency.
  6. Season with extra salt/lime juice if necessary. Serve immediately with tortilla chips!
