Instant Pot Century Egg Pork Congee.

Ingredients:
  • 3/4 cup of rinsed rice
  • 6 cups of water
  • 1 pound of pork short ribs
  • 4 slices of ginger
  • 3 thousand-year eggs
  • Salt, to taste
  • White pepper, to taste

  • Sesame oil
  • Scallions
  • Cilantro

  1. Bring a saucepan with water to a boil. Blanch the pork for 3-4 minutes in the water in order to clean the pork. Drain the pork and rinse with cold tap water.
  2. Place 3/4 cups of washed rice, 6 cups of water, the blanched pork ribs, and 4 slices of ginger in the Instant Pot.
  3. Close the lid of the Instant Pot and select the “Porridge” button, which will cook it at High Pressure for 35 minutes.
  4. While the congee is cooking, prepare the thousand-year eggs. Peel and wash them. Dice the eggs into cubes.
  5. When the Instant Pot is finished, manually release the pressure by carefully turning the venting knob to the venting position. Place a damp cloth on top of the venting knob to prevent hot congee from splashing out through the vent. Open the lid carefully.
  6. The congee will appear watery due to the separation of rice and liquid. Stir the congee to check its consistency. Add the thousand-year eggs and season with salt and white pepper to taste.
  7. Serve each bowl of congee with a drizzle of sesame oil, sliced scallions, and cilantro. Enjoy!

Congee is one of my favorite comfort foods. It's perfect when it's a little chilly or when I'm feeling under the weather. My sister and I ate it all the time when we were growing up, and she would always order thousand year egg and pork congee. This recipe captures those amazing flavors that we grew up with. The pork falls off the bone after cooking in the congee and the thousand year egg gives it a creamy and unique flavor. The white pepper adds a warmth in the congee that heals the soul. I always eat my congee with a sprinkle of fresh cilantro and scallions and a drizzle of sesame oil.

  • Any cut of pork that has bones can work with this congee. Bone-in cuts of meat carry more flavor into the rice.

  • I like my congee with a pretty thick consistency. If you prefer your congee with a thinner consistency, add more water in your Instant Pot before cooking.
